How much can we customise the system for our own specific use?

Most dropdown lists in the system can be categorised - including for example: Enquiry Categories.

90% of the system is based on core features, with Odoo Community v14 at the core and Junari’s base module atop.  The customisations so far have been guided by the ALCs who've signed up so far, but it’s been collaborative, with much of it based on Junari’s experience implementing systems - hence we’d consider it not too custom.
